Iron or clay sac

An iron sac heats faster and harder and forgives almost any mistake; a clay one heats more gently, holds its heat longer, keeps moisture under the dome and breaks if handled roughly. Neither is better in the abstract — they differ in what they do with heat and how much care they ask for.

How each of them heats

Iron conducts heat tens of times better than fired clay. An iron sac therefore heats quickly, gives that heat to the food quickly, and responds quickly when the embers are renewed or raked aside. Clay conducts poorly, and that is not a flaw but a different tool: a clay sac takes heat slowly, holds it in its mass and radiates evenly long after the embers have weakened. The same difference runs between a frying pan and a clay pot.

The practical consequence: under an iron sac it is easier to get a fierce, fast strike of heat, and under a clay one it is harder to burn anything. Anyone baking for the first time will make gentler mistakes under clay.

Crust and moisture

Iron is impermeable. All the steam that rises from the food stays in the space under the dome and drips back — more than it does under clay. A clay sac is unglazed and porous, so it takes part of that moisture into the wall and gives it back later. The difference is small, but it runs the same way as the difference in heat: iron makes a pronounced crust easier, clay makes the bake more even and more moist.

Weight

Iron is about four times as dense as fired clay, so an iron sac of the same diameter is markedly heavier. At large diameters that stops being a detail: a sac one person lifts and a sac that takes two are not the same tool, whatever they do to the food.

What destroys each of them

A clay sac is killed by thermal shock and by being dropped. Cold onto a hot hearth, hot clay doused with water, a knock against stone — any of those three is the end of it. An iron sac survives all three; what eats it instead is rust, since iron without a layer of fat corrodes in damp.

So an iron sac is the sensible choice wherever the cookware is carried, loaded into a vehicle, left out in the rain and used by hands that do not spare it. A clay one wants a place where it stays and hands that know how to lift it.

Care

Both are greased and both are washed without detergent, but for different reasons. On iron the layer of fat is protection against rust, and detergent strips it. On clay that layer sits in the pores of the wall, and detergent not only strips it but stays in the wall itself. An iron sac must be dried at once after washing; a clay one must dry slowly, as a rule overnight.
